		<description>I made this pie yesterday, with Blushing Star white peaches. It was great. I was surprised by the very minimal amount of sugar, but followed the recipe and was happily surprised. The flavor the the peaches was lovely and the bourbon was subtle. I would definitely make this pie again.
My peaches were super ripe and juicy, so I used 1/4 cup of finely ground &quot;minute&quot; tapioca as a thickener instead of flour. And I didn&#039;t add the cinnamon to the crust.
