Almond Grit Cakes with Clementines & Honey

One of the very best things about the internet is the community. It has it’s ups and downs, definitely, and sometimes having a public blog that is open to criticism leads to reading, well, criticism of my person and my recipes and my life which sucks but the trade off for the positive is huge. I’ve met people and made connections and friendships that I wouldn’t trade for the world. Not to mention of course that this blog and everything that it is and has become wouldn’t be possible without a supportive community. The readers, the commenters, the people who email to tell me that the like/love/adore the blog make it all worth it. So, thanks friends.

Through some chain of mutual friends (real and internet) I met the lovely Carrie from Plums in the Icebox on twitter. She’s a Baltimore native and we became friends on the internet and in real life.  She’s great- sweet, intelligent, witty, talented, and a Jill of all trades. Professionally she writes for Bliss Tree and recently she reached out to me about contributing to a “Brunch Off” series she has in the works. The concept is simple- two food bloggers create a brunch menu using the same seasonal ingredient and readers vote on which one they prefer. The ingredient was clementines (something I’ve been buying in bulk for a few months) and I love a good challenge, so count me in!

My goals with this challenge were to create something fun, tasty, and unique to my niche, Southern food. Surprise to no one I chose grits as a foundation ingredients (are you getting sick of grits?). Sweet grits made with cinnamon, ginger, and almond milk formed into cakes and lightly fried. Topped with fresh clementines that had been tossed in local raw honey. Something light, full of flavor, and designed for brunch. That is to say, complimentary to mimosas and bacon.

Dan and I tried some this morning and I’m happy with how they turned out. The grits were the perfect base- not overwhelmingly sweet with a good crunch thanks to the slivered almonds and a richness thanks to the almond milk. The clementines in honey were so simple and amazingly delicious, the perfect tribute to two of nature’s most wonderful ingredients. I like that it isn’t anything audacious (like fried chicken eggs benedict) or overdone (like french toast), just an unassuming combination of complimentary flavors and textures. Almond Grits Cakes with Clementines & Honey

Serves 4-6

grits:

2 cups almond milk

1/2 cup stone ground grits

1 tbsp honey

1 tsp cinnamon

1 tsp powdered ginger

1/2 cup corn flour

1/4 cup slivered almonds

Dash of cinnamon/ginger

topping:

3-4 clementines

2 tbsp honey

Pinch of salt (optional)

The grits cakes need to be formed at least an hour before being fried, though the night before is ideal.

In a medium saucepan combine grits, almond milk, honey, and spices. Cook over medium heat unti the grits are thick but still creamy. Pour into cupcake pans and chill for 1 hour or overnight.

Chop clementines in half or thirds and toss in honey. Let sit.

Combine corn flour, almonds, and spices and heat 1/4″ of oil in a heavy pan. Carefully (I used a fork so my hands didn’t warm the grits) coat the grits cakes in the flour mixture and fry for 2-3 minutes on each side, or until crispy. Top with clementine mixture and a sprinkle of salt.

Watermelon Vodka Tonic

Internet, today is my 25th birthday. I can now rent a car, I am officially in my mid-twenties, and there’s a little bigger gap in age between myself and our slew of summer interns. Or at least, so it feels. I’ve been looking forward to this birthday for a while, and I am so excited it is finally here.

As far as gifts, this has been a great birthday season (as a July birthday I tend to celebrate all. summer. long. It drives Dan insane). In May, Dan surprised me with the most adorable clutch from North Carolina native Holly Aiken. Then, in June I got my birthday tattoo. And then in July I put the money I’ve been squirreling away, plus some birthday money, plus some surprised refund money towards a new iPad! My dear friend Dana and her sweet guy Emerson surprised me with one of her adorably unique plush folkies, Leo. Not to mention the bagel sandwich I treated myself to this morning. Best birthday ever, in my opinion.

Tonight should be exciting, too. My coworker Rachael and I applied for a grant a while back to start a series of young adult programs at the Museum. Tonight is the kickoff of our series, which is titled Brews & Schmooze: First Thursdays at the JMM. We’ll be eating falafel, listening to live music, and the (amazing) artist we’re exhibiting, Loring Cornish, will be giving tours of his exhibition. All in all, it’s shaping up to be an incredible birthday. Unless it rains or nobody comes, in which case, MORE FALAFEL FOR ME!

All in all, this summer so far has been wonderful. Dan and I are loving our jobs, loving our home, loving our garden, loving our life. We’ve been surrounded by friends and family, there hasn’t been a moment that I don’t feel so fortunate and so loved. Toast with me, if you will, to this wonderful summer.

P.S. All I’m toasting with are these watermelon vodka tonics. They’re amazing. Refreshing, light, delicious, and oh so summery.

Watermelon Vodka Tonics

1 medium size watermelon
1 750 ml bottle of vodka
Tonic

Slice your watermelon. Place in a large sealed container or multiple zipped plastic bags. Pour vodka over the watermelon so that it is partially submerged. Let sit 24-48 hours in fridge.

Remove the watermelon, place in a separate container or serve. Pour liquid into an air-tight bottle. For a stronger drink, add more vodka to taste. Chill.

Mix 1 part watermelon vodka to two parts tonic. Serve.

Raspberry, Mint, & Mozzarella Skewers

Friends!  I have so much to tell you about, but no time to do it.  A lot has changed since I was here writing about the most delicious homemade granola bars ever.  In fact, the last two weeks have been a whirlwind, and I expect the next few weeks to get crazier.  First off, we found a place to live.  It’s ridiculously close to where I lived in Baltimore in college, but I’ve decided I’m fine with it because the apartment is amazing. It has a yard! a patio! a garden! and a wood burning fire place!  Not to mention beautiful dark wood floors and a pretty great kitchen.  A lot of other things have changed that aren’t ready to be released on the internet, but it’s all good news and we are very happy.

Unfortunately, all this change (while exciting) means that I won’t be around here for the next week or two.  Perhaps if a certain cable company didn’t have a monopoly in our area and didn’t think it was appropriate to make someone who is simply transferring service 40 miles wait a week for internet, it would be a different story.  But a certain cable company does have a monopoly and also thinks it’s appropriate to charge someone $20 extra a month for less services just because they’re moving.  Stupid cable company.  Anyway, I’ve digressed.  Maybe the delicious combination of raspberry, mozzarella, and mint will calm me.  It’s done that before!  Seriously though, I know that this is all over the place but these skewers are delicious and my brain is all over the place because my apartment looks like this:

Which is why I’ve been pretending that I’m here instead:

You should too.  It’d be a great place to have a picnic.  With some skewers.

Raspberry, Mint, & Mozzarella Skewers

1 pint of fresh raspberries

1 small container of fresh  mozzarella balls

1 cup of fresh mint

Skewers

On the skewers, alternate mozzarella, raspberries, and mint.  Chill and serve.

For a twist, drizzle with a balsamic vinegar reduction sauce.
