
Whole Roasted Cauliflower
Hey Party People!! How were your holidays? Were they relaxing? Were they full of hot chocolate and bubble baths and family and twinkle lights? I hope they were. And if they weren’t, well, I feel you there. Our holiday travels were a mixed bag of family and friends and overindulging on pork roll and hours spent in bumper to bumper traffic in the rain and head colds. And not nearly enough hot chocolate.
Here’s a recipe for your new January groove. It’s warm and comforting and vegetable with butter on it so it really hits all the notes you could possibly want. Perfect for your resolutions, as long as you didn’t give up butter (but you wouldn’t).
Whole Roasted Cauliflower
1 whole cauliflower
4 tbsp butter
1 tsp chipotle powder
Sea salt
Preheat oven to 400F. Rub cauliflower head with butter and season with chipotle and salt. Roast for 50 minutes- 1 hour until browned, tender, and cooked through. Serve hot.
